Warming porridge

Ingredients

  • oats or you could also do a rice pudding base

  • cinnamon and any other warming spices you like - could include nutmeg, cardamon, cloves, vanilla

  • oat milk

  • organic full fat milk

  • organic full fat yogurt (check the label for one that contains ‘live cultures’)

  • berries and other seasonal fruit

  • nut butter of your choice

Method

To prepare your stewed fruit simply mix your berries (these could be frozen but preferably organic) and other seasonal fruit (apples, pears and prunes work really well) with your chosen spices eg 1/2 teaspoon of cinnamon for every handful of fruit and a splash of water. Let simmer until soft then store in the fridge for use each morning.

Gently cook your porridge or rice pudding base however you like it, when pipping hot pour into to your breakfast bowl and add a portion of your fruit mix - the heat from the porridge should warm through the fruit.

Spoon on a large serving of your favourite nut butter eg crunchy almond butter and full fat organic yogurt.

Date & cocoa balls

Ingredients ( for approximately 12 to 14 balls)

  • dates - 10 to 12 pitted and soaked in warm water for 15 minutes

  • walnuts - 2 cups

  • cocoa powder - 2 to 3 tbsp

  • desiccated coconut - 1/2 cup

  • water - 1 tbsp

Method

Place the dates, walnuts, cocoa, water and half the desiccated coconut in a food blender.

Blend on a high setting until you get a thick paste (add a splash more water if it seems too thick). Scoop 1 to 2 tablespoons of the mixture into your hand and shape into a ball.

Set aside until all the balls are shaped (you could put them on a parchment lined backing tray). Roll each ball in the remaining coconut to cover each ball.

Store in the fridge before serving. Will last for up to 2 weeks in the fridge in an air tight container.
